Carnitas – Version 2

Carnitas can be a dish all by itself, or commonly as an ingredient in tamales, tacos, tortas and burritos.  No matter how you like it, this simple dish stands out!

Ingredients: Pork butt, onion, lime juice, bay leaves, ground cumin, oregano, orange.

This is pretty simple: the pork gets cooked in the oven for 2 hours until it’s soft enough to be pulled apart with forks.

Prior to serving, the pork is placed in fairly shallow pans to maximize surface area, then broiled for a few minutes to produce the famous alternating texture of succulent softness and caramelized crispness.

Hungry Cactus’ verdict: A

I like how simple this dish is — just pop everything in, and in two hours, it’s almost done.  The last step is just to pull the pork and broil it to crispiness.  The outcome is just wonderful and when it’s fresh out of the broiler, it’s SO good!  Oh, don’t forget the oranges that give a very refreshing and delightful hint of sweetness!  Word of advice: do not use lean/organic pork butt…the meat will not have enough marbling to keep it moist!
